Eating a wide variety of fruits & vegetables is important to stay healthy. You may be avoiding eating fruits and vegetables if you are on dialysis. The good news is that you don’t have to. Most people on dialysis can have up to six ½ cup servings of fruits & veggies a day! Fruits & vegetables contain vitamins, minerals, and fiber that your body needs. They also contain phytochemicals- which are powerful disease fighting substances. Eating fruits and vegetables can reduce your risk of chronic diseases. People who eat a diet rich in fruits & vegetables have a lower risk of heart disease, diabetes, obesity, degenerative diseases and certain cancers.
While most fruits and vegetables contain potassium, many people on dialysis can still have three servings of low potassium fruits & vegetable, two servings of medium potassium fruits and vegetables, and one serving of a high potassium fruits and vegetables each day. Talk with your dietitian to find out how many servings are right for you. Ask for a list of potassium foods if you don’t already have one. Remember that the lists show average potassium of various samples of these foods. The nutrient content in produce depends on numerous factors such as how long ago it was harvested, the soil it was grown in, and the fertilizers used. That’s why you may see the same item listed as low potassium on one list, and high potassium on another.
